A chicken is marinated in curry powder, oyster sauce and garlic in this easy peasy recipe that yields slightly spicy and slightly sweet crispy fried chicken. Serve with fried rice or noodles.
- 1 whole chicken, ready to cook, cut into portions
- 6 garlic cloves, minced
- 4 tbsp. oyster sauce
- 2 tbsp. curry powder
- 100ml veg oil
Combine chicken, garlic, oyster sauce and curry powder in a large non metallic bowl. Toss to coat, cover and leave to marinate for at least one hour.
Heat the oil in a large wok or frying pan very carefully. Fry the chicken pieces for 20-25 minutes or until cooked through and the skin crisp.
