Chewy, soft and incredibly delicious, these double chocolate cookies are ideal for lunchboxes, lazy afternoons with a cuppa or when you just don't want anything other than chocolate! Use milk, dark or white chocolate pieces according to your preferences.
- 225g plain flour
- 225g butter
- 150g caster sugar
- 55g cocoa powder
- 2 tsp. vanilla
- 1 whole egg yolk
- Pinch of salt
- 85g chocolate chips, dark milk or white
- 85g chocolate chunks, dark milk or white
Preheat oven to 190C. Grease two baking sheets. In a large mixing bowl, beat the butter, sugar and vanilla together until pale and fluffy. Add the egg yolk, beat and continue mixing until incorporated.
Sift in the flour, salt, and cocoa powder. Stir gently until mixed, then fold in the chocolate chips. Divide the mix into 12 balls and place onto the baking trays, at least an inch apart. Flatten with the back of your hand.
Press the chocolate chunks into the tops of the cookies. Bake for around 10 minutes, or until crisp round the edges, then leave to cool for at least 15 minutes before taking off the baking tray.
