Easy Gazpacho recipe

This is a deliciously refreshing summertime soup. Serve it cold with a simple side salad. This isn't the classic version of the soup, but it's really easy and just as delicious.


  • 2 cucumbers
  • 1 carrot
  • 500ml tomato juice
  • 2 cloves of garlic
  • 2 tbsp. Worcestershire sauce
  • 2 tbsp. lemon juice
  • 2 tbsp. vinegar
  • 1 tbsp. olive oil
  • Several ice cubes
  • Pinch of salt, sugar and pepper
  • Handful of fresh coriander


  1. Peel the cucumbers and the carrot and roughly chop them. Roughly chop the garlic cloves.

  2. Place all of the ingredients into a blender and blitz until smooth.

  3. Pour the soup into a bowl and place into the fridge to cool for a few hours before serving.
