This is a deliciously refreshing summertime soup. Serve it cold with a simple side salad. This isn't the classic version of the soup, but it's really easy and just as delicious.
- 2 cucumbers
- 1 carrot
- 500ml tomato juice
- 2 cloves of garlic
- 2 tbsp. Worcestershire sauce
- 2 tbsp. lemon juice
- 2 tbsp. vinegar
- 1 tbsp. olive oil
- Several ice cubes
- Pinch of salt, sugar and pepper
- Handful of fresh coriander
Peel the cucumbers and the carrot and roughly chop them. Roughly chop the garlic cloves.
Place all of the ingredients into a blender and blitz until smooth.
Pour the soup into a bowl and place into the fridge to cool for a few hours before serving.
