Easy Gooseberry Cake recipe

Whiz up a lightly spiced, sweet and fruity cake in no time at all with this easy gooseberry cake recipe. Scented with cinnamon and bursting with fresh juicy gooseberries, this cake is sure to be a hit with the whole family.


  • 250g self-raising flour
  • 350g fresh gooseberries
  • 125g caster sugar
  • 50g butter
  • 1 egg
  • 75ml milk
  • 1 tsp. ground cinnamon


  1. Preheat the oven to 170C and top and tail the gooseberries. Grease a 23cm cake tin.

  2. Cream the butter and sugar together until pale and fluffy. Beat in the egg. Sift in the flour and cinnamon. Stir in the milk, then fold in the gooseberries. Tip into the cake tin. Bake for 45 minutes or until golden on top. Leave to cool before serving.

If you like, omit the cinnamon and use ginger or try some finely grated lemon zest. Recipe serves 6-8.

Think the amount of butter is wrong. I followed the instructions above and the batter was way too dry- like a crumble. added another 50g butter and a slosh more milk. turned out well. very tasty.
