Easy Lemon Chicken recipe

This simple lemon chicken dish makes for an excellent alternative to a takeaway dish. It's low in calories and fat and is a great dinnertime dish, as it only takes 15 minutes to cook.


  • 4 chicken breasts
  • 250ml chicken stock
  • Juice of 1 lemon
  • 1.5 tbsp. runny honey
  • 1 tbsp. soy sauce
  • 1 tbsp. corn flour
  • 1 carrot
  • 1 red pepper
  • 2 spring onions
  • 100g sugar snap peas


  1. Combine the chicken stock, lemon juice, runny honey and soy sauce in a bowl. Slice the chicken into thin strips and dust with corn flour.

  2. Heat a little oil in a wok. Add the chicken and fry until it starts to turn golden. Slice the carrot into thin strips, slice the red pepper in half, remove the seeds and pith and thinly slice and thinly slice the spring onions on the diagonal.

  3. Add the carrot and red pepper to the pan and fry for 1-2 minutes. Add the lemon mixture and bring to a simmer. Add the peas and cook for 4-5 minutes until tender. Serve immediately garnished with spring onions.

For extra flavour, add lemon zest to the stock mixture - it will be super fresh. Recipe serves 4.
