These scones are very easy to make – don’t be put off by the mayonnaise. It gives them a light, slightly cakey texture.
- 250g self-raising flour
- 175ml milk
- 75g mayonnaise
- 2 tbsp. caster sugar
Preheat the oven to 180C and grease and line a baking tray.
Sift the flour into a bowl and then stir in the sugar.
Add the mayonnaise and milk and mix well until you have a smooth dough.
Either roll the dough out and cut it into scones or drop tablespoons of it onto a baking tray.
Bake the scones for 25 to 30 minutes. They will double in size and they’ll be golden brown.
