Easy Smoked Cheese Souffle recipe

Smoked cheese is the base for this delicious souffle recipe - it's packed with flavour and uses very few ingredients. Perfect for a dinner party starter.


  • 150g strong smoked cheddar, grated
  • 300ml milk
  • 1 tsp. Dijon mustard
  • 6 eggs
  • 2 tbsp. butter
  • 2 tbsp. plain flour


  1. Melt the butter in a large saucepan. Pour the milk into another and heat until just under boiling point.

  2. Add the flour to the milk and stir. Cook for 2-3 minutes, stirring constantly, over a medium heat. Stir in the mustard. Gradually stir in the milk, bit by bit, until the milk combines with the flour mix. Stir and cook until thickened and boiling, then add the cheese and stir until melted.

  3. Separate the eggs. Beat the yolks into the cheese sauce and season well with salt and black pepper. Beat the egg whites until stiff peaks form, then fold a little of the whites into the sauce to loosen. Gently fold the rest of the whites into the sauce. Spoon into a large souffle or baking dish, level the top, then bake for 30 minutes at 190C or until golden and risen.

If you like, add some spinach to the white sauce for a little greeness. Recipe serves 6.
