Extra Fluffy Pancakes recipe

These extra fluffy pancakes are really rather yummy - tall, soft and just a little bit crispy round the edges. The soft texture of them makes them just perfect for mopping up golden syrup, maple syrup and chocolate sauce.


  • 180ml milk
  • 2 tbsp. vinegar
  • 125g plain flour
  • 2 tbsp. caster sugar
  • 1 tsp. baking powder
  • 1/2 tsp. bicarbonate of soda
  • 1/2 tsp. salt
  • 1 egg
  • 30ml melted butter


  1. Stir together the milk and vinegar and set aside for 5 minutes to sour.

  2. Whisk the egg and butter into the soured milk, then sift in the flour, sugar, baking powder, bicarb and salt. Whisk until you have a smooth and lump-free batter.

  3. Heat a large frying pan over a medium heat and add a dash of oil. Swirl around the pan. Pour 4 tbsp (60ml) of the batter into the pan, then cook until bubbles appear on the surface of the pancake. Flip and cook until golden brown on the other side.

For extra flavour, add a dash of vanilla extract or some vanilla seeds. Recipe makes around 6 pancakes.
