Feta, Bacon & Pepper Garlic Bread recipe

Preparation Time: 30 minutes | Cooking Time: 10 minutes

This posh twist on a classic side dish can either be served alongside a big bowl of steaming hot pasta slathered in sauce, or you can eat it as it is - it's definitely filling enough!


  • 1 large French loaf
  • 2 medium onions
  • 8 garlic cloves
  • 250g smoked bacon
  • 2 red peppers
  • 100g feta cheese
  • Black pepper to taste
  • Olive oil


  1. Finely dice the onions. Mince the garlic cloves. Dice the smoked bacon. Slice the peppers in half and remove the seeds and pith, then finely dice the flesh. Crumble the feta cheese. Slice the French loaf into thick slices, but not slicing all the way through - keeping it intact at the bottom.

  2. Heat olive oil in a large frying pan. Fry the bacon until it starts to release some oils, then add the onion, garlic and pepper. Fry gently until the veggies are soft and golden but not overly browned.

  3. Take the pan off the heat and stir in the feta cheese. Season the mix with black pepper.

  4. Spoon the mixture in between the bread slices, using your spoon to squish the mixture up the sides of the bread. Wrap the loaf in foil and heat in the bottom of a hot oven or on the BBQ.

If you like, experiment and use different flavoured peppers or use more or less garlic according to taste. Recipe serves 4-6.
