This nut roast combines brown rice and breadcrumbs into the loaf mixture, making it the perfect filling Christmas dinner for everyone. Fresh herbs combine with the nuts to make a luxury nut roast fit for a king.
- 175g cooked brown rice
- 125g mushrooms
- 125g chopped mixed nuts
- 115g wholemeal breadcrumbs
- 125g grated cheddar
- 2 eggs
- 2 carrots
- 1 onion
- 1 tbsp. butter
- 1 clove of garlic
- Small handful chopped fresh mixed herbs - parsley, sage, basil
- Salt and pepper
Finely chop the onion, grate the carrots and crush the garlic clove. Slice the mushrooms.
Fry the onion, carrots and garlic in the butter for 5-10 minutes until softened and golden.
Add the mushrooms and cook until softened.
Stir in the brown rice, breadcrumbs, nuts, cheese, eggs, herbs and salt and pepper. Once thoroughly mixed, press into a loaf tin.
Cook at 180C for one hour or until browned and firm.
