This fluffy banana cake is made with butter, egg and self-raising flour, making it more like a cake than a loaf, with a lovely fluffy texture. Serve in slices with a dusting of sugar and a drizzle of syrup.
- 150g caster sugar
- 125g butter
- 1 egg
- 1 tsp. vanilla
- 2 large ripe bananas, mashed
- 190g self-raising flour
- 60ml milk
Preheat the oven to 150C and lightly grease and line a 2lb loaf tin.
Put the sugar, butter and vanilla in a small saucepan and stir together until the sugar dissolves into the butter. Take the pan off the heat and pour everything into a mixing bowl, then mash in the bananas and egg.
Sift in the flour and stir to combine, then stir in the milk. Pour into the prepared loaf tin and bake for 45 minutes or until a skewer inserted into the centre of the cake comes out clean.
