These sweet fortune cookies are easier to make than you might think - you just have to work quickly!
- 150g caster sugar
- 3 egg whites
- 115ml butter, melted, cooled
- 1/4 tsp. each vanilla and almond extract
- 130g plain flour
- 4 tbsp. water
Preheat the oven to 190C. Grease cookie sheets, then have fortunes ready on small strips of paper.
In a glass bowl, beat egg whites and sugar with an electric whisk until fluffy, around two minutes. Reduce the speed to low, then whisk in the butter, then the vanilla and almond, then the flour, and then the water.
Spoon the batter thinly onto the baking sheets in 3 inch circles, leaving room between each cookie.
Bake for 5-7 minutes, until the edges start to brown. Working quickly, remove the cookies from the baking sheet one at a time. Put the fortune onto the cookie, fold in half to enclose, then fold the ends of the halves together to form a horseshoe shape. Be careful not to work whilst the cookies are too hot as the paper will stick to the cookie, but too cool and the cookies will not fold.
