This delicious fragrant chicken dish is perfect for BBQs - serve with a big side salad and some crunchy garlic potatoes.
- 900g boneless chicken thighs
- Zest and juice of 2 lemons
- 1 tbsp. paprika
- 1 tbsp. piri piri sauce
- 2 tbsp. brown sugar
- 3 crushed garlic cloves
- 3 tbsp. olive oil
- 2 tbsp. finely chopped coriander
Put the chicken in a non-metallic bowl with the lemon zest and juice, paprika, piri piri sauce, brown sugar, garlic, olive oil and coriander. Toss to combine, cover with cling and marinate for 2 hours.
To cool, either griddle on a hot griddle pan, BBQ, or grill until charred on the outside and no longer pink in the middle.
