Fresh Orange, Mint and Halloumi Salad recipe

Preparation Time: 15 minutes | Cooking Time: 10 minutes

Zingy and super fresh, this yummy salad is just perfect as a dinner party starter or as a main course with the addition of some griddled chicken.


  • 500g halloumi
  • 3 medium oranges
  • 150g salad greens of choice
  • 1 small bunch of mint, chopped
  • 3 tbsp. extra-virgin olive oil
  • 2 tbsp. white wine vinegar
  • 50g toasted walnuts


  1. Peel the oranges. Slice into segments. Put into a bowl, along with any juice, the mint, olive oil and vinegar. Toss to combine, then set to one side.

  2. Slice the halloumi. Heat a little oil in a large frying pan. Fry the cheese on either side for 2-3 minutes or until golden brown and crisp.

  3. To serve, toss the salad greens into the orange mix, then top with halloumi slices and walnuts.

If you like, you could use watermelon, apples or pears in place of the orange, but you'd need a little extra citrus juice. Recipe serves 4.
