Zingy and super fresh, this yummy salad is just perfect as a dinner party starter or as a main course with the addition of some griddled chicken.
- 500g halloumi
- 3 medium oranges
- 150g salad greens of choice
- 1 small bunch of mint, chopped
- 3 tbsp. extra-virgin olive oil
- 2 tbsp. white wine vinegar
- 50g toasted walnuts
Peel the oranges. Slice into segments. Put into a bowl, along with any juice, the mint, olive oil and vinegar. Toss to combine, then set to one side.
Slice the halloumi. Heat a little oil in a large frying pan. Fry the cheese on either side for 2-3 minutes or until golden brown and crisp.
To serve, toss the salad greens into the orange mix, then top with halloumi slices and walnuts.
