Garlic Butter Samphire recipe

Preparation Time: 10 minutes | Cooking Time: 35 minutes

Another deliciously simple way to serve samphire, in this recipe, young samphire is fried gently in garlicky butter until tender. Serve it as it is, or with a hunk of bread to mop up all that delicious butter.


  • 400g samphire
  • 1 garlic head
  • 5-6 tbsp. butter
  • 1 tbsp. oil
  • Salt and pepper


  1. Place the garlic head onto a square of foil. Drizzle with oil and season with salt and pepper, then gather the foil into a parcel and scrunch at the top to seal. Bake in a 200C oven for 20-30 minutes until the garlic is tender. When cooked, squeeze the garlic from the cloves.

  2. Meanwhile, melt butter in a frying pan. Add the cooked garlic and stir. Add the samphire and toss in the garlic butter. Fry for 2-4 minutes until tender and cooked through to your liking. Season to taste with salt and pepper.

You can use uncooked garlic in this recipe, but it will be fairly harsh on the palette - roasting the garlic helps to mellow this flavour. Recipe serves 4.
