Another deliciously simple way to serve samphire, in this recipe, young samphire is fried gently in garlicky butter until tender. Serve it as it is, or with a hunk of bread to mop up all that delicious butter.
- 400g samphire
- 1 garlic head
- 5-6 tbsp. butter
- 1 tbsp. oil
- Salt and pepper
Place the garlic head onto a square of foil. Drizzle with oil and season with salt and pepper, then gather the foil into a parcel and scrunch at the top to seal. Bake in a 200C oven for 20-30 minutes until the garlic is tender. When cooked, squeeze the garlic from the cloves.
Meanwhile, melt butter in a frying pan. Add the cooked garlic and stir. Add the samphire and toss in the garlic butter. Fry for 2-4 minutes until tender and cooked through to your liking. Season to taste with salt and pepper.
