These yummy muffins are flavoured with garlic and herb cream cheese and freshly snipped chives. They're perfect as part of a picnic and are really lovely with a cream cheese "frosting".
- 200g plain flour
- 50g oat bran
- 1 tbsp. baking powder
- 1/2 tsp. each salt and pepper
- 1 large egg or 2 small
- 150g garlic and herb cream cheese at room temp, stirred until creamy
- 160ml milk
- 2 tsp. freshly snipped chives
Sift together the flour, baking powder, salt and pepper. Stir in the oat bran. Preheat the oven to 180C and grease or line a 12-hole muffin tin.
Gradually whisk the milk into the cheese. If the cheese is at room temp there shouldn't be any problems with the mix going lumpy. Beat in the eggs and stir in the chives.
Pour the wet mix into the dry mix, then divide between the muffin liners and bake for 30 minutes or until a skewer inserted into the centre comes out clean.
