These sweet roasted parsnips are the perfect accompaniment to any roast meat dish - parsnips are tossed in oil, garlic, honey, salt and pepper and then roasted. You can also partially prepare the parsnips by parboiling and arranging on trays before baking.
- 8 parsnips
- 2 garlic cloves
- 2 tbsp. oil
- 2 tbsp. honey
- Salt and pepper
Peel parsnips if needed and chop into even sized pieces. Place into a pan of cold salted water and bring to the boil. Simmer for 10 minutes and then drain and leave to air dry.
Mince garlic cloves. Toss parsnips with oil, honey, salt, pepper and garlic. Arrange in a single layer on a baking tray lined with foil (it makes washing up easier).
Bake in a 200C oven for 15-25 minutes until golden and tender. Serve hot from the oven.
