This fondue is a delicious mix of rich cheeses and garlic. It’s very rich, but you could pep it up a bit with some finely chopped chilli if you prefer.
- 5 garlic cloves
- 1kg cheese of your choice – choose some melting cheese, some sharp, flavourful cheese
- 100ml white wine
- 50ml brandy
- Salt and pepper
- ½ tsp. grated nutmeg
Cut one of the garlic cloves in half and rub it around the inside of your fondue pot. Mince the rest of the garlic cloves and then put them to one side.
Grate the cheeses.
Put the wine into the fondue pot and bring it to the boil. Reduce the heat to a simmer and then add the cheeses, gradually, until smooth.
Add the garlic cloves and stir well.
Add the brandy, salt, pepper and nutmeg and then taste the mixture. Adjust the seasoning if necessary.
Serve the fondue with the crudités of your choice.
