This sweet and bubbly concoction is perfect for parties and for drinking throughout the summer. Mango, peach and ginger ale combine to create a fruity drink that is best served chilled over ice.
- 1 ripe mango
- 1 ripe peach
- 2 ripe apricots
- 500ml ginger ale
- 2 tbsp. freshly chopped mint leaves
Peel, stone and finely dice the fruit. Whiz the mango in a blender until smooth, then add the apricots, peach and mint leaves. Whiz with a little of the ginger ale until smooth.
Add the rest of the ginger ale and process again until smooth. Divide between 4 glasses.
