I'm calling this one a spread as it's not so much a recipe as a combination and a quick mix with a spoon, but it's still delicious. Serve it with sliced Italian bread and some wild rocket for a lovely Italian inspired snack.
- 225g goat’s cheese
- 50ml good quality extra virgin olive oil
- 1 tbsp. chopped parsley
- 1 tsp. lemon juice
Simply mix everything together well in a large bowl.
Put into the fridge for around half an hour and then serve!
