Gooey Cheesecake Chocolate Cupcakes recipe

Preparation Time: 20 minutes | Cooking Time: 25 minutes

These chocolate cupcakes have a yummy gooey topping made with cream cheese, giving them a distinct cheesecake flavour. Perfect for parties and for those with little time to spare as you don't even need to ice them!

  • 200g plain flour
  • 200g caster sugar
  • 50g cocoa powder
  • 250ml milk
  • 70ml oil
  • 1 tbsp. cider vinegar
  • 1 tsp. vanilla extract
  • 1 tsp. bicarbonate of soda
  • 1/2 tsp. salt
  • 225g cream cheese
  • 1 egg
  • 75g caster sugar
  • 1 tsp. vanilla
  • Pinch of salt
  • 175g milk chocolate chips

  1. Preheat oven to 180C. Grease 24 cupcake liners and place onto a baking tray.

  2. In a large bowl whisk together the flour, caster sugar, cocoa powder, bicarb and salt together. Whisk the oil, milk, vinegar and vanilla together. Add the wet mixture to the dry mixture and stir to combine. Divide between the cupcake liners, filling them 1/3-1/2 of the way full.

  3. Beat the cream cheese, egg, sugar, vanilla and salt together well until very smooth. Fold in the chocolate chips. Top the half filled cupcake liners with a dollop of the cream cheese mix. Bake the cakes for 25-30 minutes until the cakes are set and the topping golden - they will still be lovely and squidgy inside.

You could make this into a vanilla cake mix - simply omit the cocoa powder and add more flour, along with some vanilla extract, and omit the milk chocolate chips from the topping and use white chocolate instead. Recipe makes 24 cupcakes.
