Gooey Toffee Date and Banana Loaf recipe

Preparation Time: 30 minutes | Cooking Time: 90 minutes

Dates are soaked in hot water until they take on a rich, toffee-ish texture, then layered with a banana bread batter in this delicious recipe which yields a rich, gooey toffee flavoured banana cake.


  • 125g pitted dates, chopped, soaked in 100ml boiling water
  • 125g butter
  • 175g sugar
  • 2 eggs
  • 125ml milk
  • 225g plain flour
  • 1 1/2 tsp. baking powder
  • 2 medium bananas, ripe, mashed


  1. Preheat the oven to 180C and line a 450g loaf tin, greasing the sides.

  2. Heat the dates in a small saucepan for 5 minutes or until pulpy. Set to one side and mash with a fork.

  3. Cream butter and sugar until pale and fluffy, then beat in the eggs one at a time. Sift in the flour and baking powder and stir to combine, then stir in the milk and bananas until well blended.

  4. Pour 1/3 of the banana batter into the loaf tin, top with 1/2 of the date mixture and repeat, ending on a layer of banana batter. Bake for an hour for 1 1/2 hours or until a skewer inserted into the centre of the cake comes out clean.

If you like, add a pinch of cinnamon or ginger to the batter. Recipe serves 8.
