Dates are soaked in hot water until they take on a rich, toffee-ish texture, then layered with a banana bread batter in this delicious recipe which yields a rich, gooey toffee flavoured banana cake.
- 125g pitted dates, chopped, soaked in 100ml boiling water
- 125g butter
- 175g sugar
- 2 eggs
- 125ml milk
- 225g plain flour
- 1 1/2 tsp. baking powder
- 2 medium bananas, ripe, mashed
Preheat the oven to 180C and line a 450g loaf tin, greasing the sides.
Heat the dates in a small saucepan for 5 minutes or until pulpy. Set to one side and mash with a fork.
Cream butter and sugar until pale and fluffy, then beat in the eggs one at a time. Sift in the flour and baking powder and stir to combine, then stir in the milk and bananas until well blended.
Pour 1/3 of the banana batter into the loaf tin, top with 1/2 of the date mixture and repeat, ending on a layer of banana batter. Bake for an hour for 1 1/2 hours or until a skewer inserted into the centre of the cake comes out clean.
