Gooseberry Crumble recipe

Preparation Time: 30 minutes | Cooking Time: 45 minutes

Crumbles are always a treat, but make them with gooseberries and you'll enjoy them even more. Sweet, tart and with a deliciously buttery topping, this is the perfect way to use up a glut of gooseberries.


  • 500g gooseberries
  • 175g plain flour
  • 85g each caster sugar and light brown sugar
  • 85g butter
  • 2 tbsp. water


  1. Slice the top and bottom off of the gooseberries. Toss with caster sugar and 2 tbsp. water. Spread in the bottom of a baking dish.

  2. In a bowl, rub the butter and plain flour together until they resemble breadcrumbs. Stir in the brown sugar. Sprinkle over the gooseberries.

  3. Bake in a 160C oven for 45 minutes or until golden and crisp on top. Leave to cool for around 10 minutes before serving.

Serve the crumble with some cool ice cream or a little warm custard. Recipe serves 6-8.
