This thick gooseberry drink is a little bit like a cordial, and a little bit like a thick juice drink. Whatever you call it, it's delicious! Either dilute with a little sparkling water or lemonade or serve it as it is.
- 1kg gooseberries
- 200g caster sugar
- 500ml water
- Juice of 1 lemon
Top and tail the gooseberries. Put into a large saucepan with the sugar, water and lemon juice. Bring to a simmer and cook for 10 minutes, or until thick and pulpy.
Pass through a sieve into a bowl, pushing all the fruit through the sieve with a spoon. Leave to chill and then serve.
