Gooseberry Granita recipe

Preparation Time: 5 hours | Cooking Time: 10 minutes

Refreshing, sweet and definitely grown-up, this gooseberry granita is packed with flavour. It's great for summer parties and it's fairly low in calories and fat, too. Make it a little more decadent by serving with ice cream or alongside a glass of something sparkling.


  • 450g gooseberries
  • 200ml dessert wine
  • 1 tbsp. lemon juice
  • 150g caster sugar
  • 300ml water


  1. Slice the top and bottom off of the gooseberries. Put the gooseberries, caster sugar and water into a saucepan and simmer for 10 minutes or until pulpy. Leave to cool, whiz in a food processor and then pass through a sieve.

  2. Stir in the lemon juice and dessert wine, then transfer to a freezeable container. Cover and freeze for 1 hour, then mash with a fork. Freeze for another 4 hours, mashing every hour. Serve in glasses.

If you freeze the granita for too long, simply take it out of the freezer for about an hour before serving and mash really well. Recipe serves 6.
