Refreshing, sweet and definitely grown-up, this gooseberry granita is packed with flavour. It's great for summer parties and it's fairly low in calories and fat, too. Make it a little more decadent by serving with ice cream or alongside a glass of something sparkling.
- 450g gooseberries
- 200ml dessert wine
- 1 tbsp. lemon juice
- 150g caster sugar
- 300ml water
Slice the top and bottom off of the gooseberries. Put the gooseberries, caster sugar and water into a saucepan and simmer for 10 minutes or until pulpy. Leave to cool, whiz in a food processor and then pass through a sieve.
Stir in the lemon juice and dessert wine, then transfer to a freezeable container. Cover and freeze for 1 hour, then mash with a fork. Freeze for another 4 hours, mashing every hour. Serve in glasses.
