This sweet yet sour liquor is particularly good for Christmas celebrations. It takes a while to reach full flavour, but it's well worth it - so get started now!
- 1 litre vodka
- 1kg gooseberries
- 4 tbsp. sugar (or more)
Prick the gooseberries with a fork. Put into a container with the vodka (a resealable glass container is best, if not plastic), in a dark place. Leave for 6 weeks and swirl around in the container every few days.
Add the sugar and swirl around every few days for a further two weeks. Drain the mix through a coffee filter into a clean bottle and seal. Leave in a cool cupboard for 4 months to a year, giving the bottle a good shake before serving.
