- 600g rump steak
- 50g anchovy fillets
- 50g sun-dried tomatoes
- 1 tbsp. capers, drained
- 2 tsp. mixed peppercorns, ground (optional)
- 2 tsp. extra-virgin oil
Pat the anchovies and sun-dried tomatoes dry. Mince the anchovies and roughly chop the sun-dried tomatoes. Finely chop the capers.
Remove any fat and gristle from the steak. Slice into thin strips, then dice the strips. Finely mince the meat using your knife.
Combine steak, anchovies, tomatoes, capers and oil in a bowl. Shape into 4 burgers, then if desired pat with the ground peppercorns.
To cook, fry in a little oil on either side for 2-3minutes until golden and cooked through, or if you prefer, rare in the middle.
