Chicken is marinated in Greek olive oil and lemon juice, then fried until golden and tender in this easy yet effective recipe.
- 4 chicken pieces
- 125ml Greek olive oil
- Juice of 1 lemon
- 1 1/2 tbsp. each black pepper and dried oregano
- 1 tsp. salt
- 1/4 tsp. cinnamon
- 1/4 tsp. poultry seasoning
- Oil to fry
Combine olive oil, lemon juice, pepper, oregano, salt, cinnamon and poultry seasoning in a large non metallic bowl. Add the chicken, toss to coat and leave to sit for an hour.
To cook, heat extra olive oil in a frying pan and add the chicken pieces. Fry on either side for 10-20 minutes or until golden brown and no longer pink in the middle.
