Green Beans with Anchovies, Garlic and Lemon Juice recipe

This delectable side dish is perfect for serving alongside chicken, grilled beef or pork. The green beans are crunchy, savoury, salty and super fresh. If you like, serve 'em as a salad with some punchy salad dressing made with extra anchovies and some green salad leaves.

Ingredients

  • 250g fresh green beans, trimmed
  • 1 garlic clove, minced
  • 4 tbsp. water
  • Lemon juice to taste
  • 3 anchovy fillets and 1 tbsp. oil from the tin
  • Black pepper to taste

Directions

  1. Put beans, water, garlic and a squeeze of lemon juice into a saucepan. Bring to the boil, cover and cook for 4-5 minutes until tender but still crisp, stirring occasionally.

  2. Mash anchovy fillets, oil and black pepper. Add to the beans and toss to combine. Taste and add more lemon juice if desired.

For a bit of crunch, try sprinkling the beans with some toasted pine nuts. Recipe serves 2 as a side dish, 1 as a salad.
