Green Beans with Bacon recipe

Preparation Time: 10 minutes | Cooking Time: 25 minutes

A particularly delicious way to jazz up your green beans, in this recipe, lightly boiled green beans are tossed with crisp bacon, onion and a zingy yet sweet red wine vinegar dressing.


  • 1kg fresh green beans
  • 225g smoked bacon
  • 1 onion
  • 5 tbsp. red wine vinegar
  • 2 tbsp. olive oil
  • 1 tbsp. caster sugar
  • Small handful freshly chopped parsley


  1. Top and tail the green beans. Wash. Place into a pan of boiling salted water and cook for 2-3 minutes, until tender crisp. Drain and plunge into a bowl of ice water.

  2. Thinly slice the onion and dice the bacon. Heat oil in a frying pan and add the bacon. Fry until golden and crisp, then remove with a slotted spoon. Add the onion and fry until golden, translucent and tender, around ten minutes.

  3. Add the bacon back to the pan along with the green beans, vinegar, sugar, and a pinch of salt and pepper. Cook until the sugar has dissolved, the beans are warmed and the vinegar dressing is slightly thickened.

For a little extra flavour, add some garlic and some chopped nuts to the beans. Recipe serves 6.
