A particularly delicious way to jazz up your green beans, in this recipe, lightly boiled green beans are tossed with crisp bacon, onion and a zingy yet sweet red wine vinegar dressing.
- 1kg fresh green beans
- 225g smoked bacon
- 1 onion
- 5 tbsp. red wine vinegar
- 2 tbsp. olive oil
- 1 tbsp. caster sugar
- Small handful freshly chopped parsley
Top and tail the green beans. Wash. Place into a pan of boiling salted water and cook for 2-3 minutes, until tender crisp. Drain and plunge into a bowl of ice water.
Thinly slice the onion and dice the bacon. Heat oil in a frying pan and add the bacon. Fry until golden and crisp, then remove with a slotted spoon. Add the onion and fry until golden, translucent and tender, around ten minutes.
Add the bacon back to the pan along with the green beans, vinegar, sugar, and a pinch of salt and pepper. Cook until the sugar has dissolved, the beans are warmed and the vinegar dressing is slightly thickened.
