This simple green chutney is a lovely Indian chutney that tastes wonderful with some poppadoms. You can also serve it on toast or with the curry of your choice.
- 1 bunch of fresh coriander
- 1 green chilli
- 1 tbsp. minced root ginger
- 1 tbsp. dry roast peanuts
- 2 tbsp. lemon juice
- 4 or 5 mint leaves
- Pinch each sugar and salt
Roughly chop the chilli and the coriander.
Put the coriander, chilli, ginger, peanuts, lemon juice, mint leaves, sugar and salt into a blender.
Blitz until smooth and then decant into a bowl to serve.
