Griddled Halloumi with Caper Sauce recipe

Preparation Time: 15 minutes | Cooking Time: 5 minutes

Salty capers work brilliantly with halloumi cheese. In this recipe, capers, olive oil and lemon juice combine to create a tangy sauce that's just perfect for serving over crisp halloumi.

Ingredients

  • 250g halloumi cheese
  • 1 tbsp. oil
  • Black pepper
  • 4 tbsp. capers
  • 2 garlic cloves
  • 2 tbsp. extra-virgin olive oil
  • Juice and zest of 1/2 lemon
  • 1 tsp. ground coriander
  • Black pepper
  • Small handful freshly chopped coriander

Directions

  1. Crush the garlic cloves. Put the capers into a bowl and cover with water (this helps to remove some of the briny flavour) then leave to sit for 5 minutes. Drain.

  2. Roughly chop the capers. In a bowl, combine the capers, garlic, oil, lemon juice and zest, ground coriander and black pepper to taste. Leave to sit at room temperature whilst you griddle the halloumi.

  3. Heat a BBQ or griddle pan over a medium heat. Slice the halloumi and griddle on either side for 1-2 minutes or until slightly charred and crisp. To serve, drizzle with the sauce, then sprinkle with the chopped coriander.

If you like, use a little mint in place of the coriander. Recipe serves 2.
