Griddled Marrow recipe

Preparation Time: 20 minutes | Cooking Time: 10 minutes

You can do more with marrow than you'd think - slice it really thinly, and cook on a griddle pan until chargrilled. Toss with a little basil, some olive oil and lemon juice and you have a quick, simple salad with bags of flavour.


  • 1 marrow
  • 2 tbsp. oil
  • 1 garlic clove
  • 2 tbsp. oil
  • 2 tbsp. lemon juice
  • Salt and pepper
  • 10 basil leaves


  1. Remove the seeds from the marrow and then use a vegetable peeler to slice it into thin slices.

  2. Mince the garlic clove and mix with 2 tbsp. oil. Brush all over the marrow, and fry the slices on a griddle pan until lightly charred and tender. Leave to cool.

  3. Whisk together oil, lemon juice and salt and pepper to taste. Rip the basil leaves up and then add to the marrow along with the dressing. Toss to combine all ingredients, then serve.

If you like, you can just thinly slice the marrow - you might just need to cook it for a little longer or steam before chargrilling. Recipe serves 4.
