This easy peasy dish brings together simple Brazilian flavours - grilled sweet corn and garlicky mayonnaise. Perfect for summer BBQs!
- 6 corn cobs
- 2 garlic cloves, crushed
- 6 tbsp. mayo, best quality you can find
- 4 tbsp. grated parmesan
- 2 tbsp. finely chopped coriander
- 1 lime, chopped into quarters
Mix the mayo with the garlic and season to taste. Boil the corn cobs for 5 minutes, then take from the water and pat dry. Before putting onto the BBQ, rub the mayo into the corn. Grill until lightly charred.
Sprinkle with parmesan, coriander and squeeze over a little bit of lime juice before serving.
