Grilled Corn on the Cob with Garlicky Mayo recipe

This easy peasy dish brings together simple Brazilian flavours - grilled sweet corn and garlicky mayonnaise. Perfect for summer BBQs!


  • 6 corn cobs
  • 2 garlic cloves, crushed
  • 6 tbsp. mayo, best quality you can find
  • 4 tbsp. grated parmesan
  • 2 tbsp. finely chopped coriander
  • 1 lime, chopped into quarters


  1. Mix the mayo with the garlic and season to taste. Boil the corn cobs for 5 minutes, then take from the water and pat dry. Before putting onto the BBQ, rub the mayo into the corn. Grill until lightly charred.

  2. Sprinkle with parmesan, coriander and squeeze over a little bit of lime juice before serving.

For extra flavour, put some dried chilli flakes into the mayo. Recipe serves 4.
