Feta, chilli and mint are a match made in heaven, and in this recipe, they combine to jazz up an ordinary marrow. The marrow is grilled until soft, then scooped out of the skin, mashed together with some super tasty ingredients and grilled again until tender and crisp.
- 1 large marrow
- 100g feta cheese
- 1 tsp. dried red chilli flakes
- 2 garlic cloves
- 1 tbsp. freshly chopped mint
- 1/2 tsp. cracked black pepper
- 1 tbsp. extra virgin olive oil
Slice the marrow in half through the middle and remove the seeds. Score the flesh. Put cut side up on a baking tray under a medium grill for around 10 minutes.
Meanwhile, crumble the feta into a bowl. Crush the garlic cloves and add to the feta along with the chilli flakes, mint, pepper and olive oil. Mix everything together.
Check the marrow. If it's soft enough to scoop out of the skin, remove from the oven. If not, keep it in there for around 5-10 minutes more.
Once soft, scoop the marrow from the flesh. Mash with the feta mixture and then spoon back into the marrow skins. Put back under the grill for 10 minutes or until tender and lightly golden.
