Punchy in flavour, this elegant dish is super impressive but very simple to make. Salmon is seasoned and grilled very simply with salt and pepper, then drizzled wth an anchovy sauce. Serve with boiled new potatoes.
- 4 x 100g salmon fillets, boned, skin on
- 2 tbsp. extra-virgin olive oil
- 2 tbsp. freshly chopped parsley
- Zest of 1 lemon
- Juice of 1/2 lemon
- 2 anchovy fillets, drained
- 1 garlic clove
- Salt and pepper
- Olive oil
Brush the salmon fillets with olive oil and season with salt and pepper. Heat a griddle pan over a medium heat. Fry the salmon skin down for 6 minutes, then turn over and cook for another 4 minutes or until opaque.
While the salmon is cooking, make the sauce. Finely dice the anchovy fillets and mince the garlic clove. Whisk together the olive oil, parsley, lemon zest, lemon juice, anchovies, garlic and pepper to taste. To serve, spoon over the salmon.
