Guacamole recipe

Guacamole is a traditional Mexican sauce/dip that's served with all sorts of things, including chicken, beef and pork, and as a garnish for things like fajitas and quesadillas. A good guacamole needs good avocados, so make sure you buy yours from a farm shop or farmer's market and only use them when completely ripe.


  • 3 avocados
  • 1/2 small onion
  • Juice of one lime
  • 2 plum tomatoes
  • 1 clove garlic
  • 1 tsp. salt
  • Pinch cayenne pepper
  • Small handful fresh coriander


  1. Peel, stone and mash the avocados in a bowl.

  2. Dice the tomatoes and the onion and mince the garlic clove. Stir into the avocados.

  3. Stir in the lime juice, cayenne and salt, cover with cling wrap and put into the fridge for one hour for the best flavour.

  4. Before serving, finely chop the coriander and stir through the guacamole.

Mix the avocados with the other ingredients as soon as you mash them, as if they are left for too long they will brown. Mixing them with the lime juice keeps them from browning, so work quickly when making this. This recipe serves 16.
