Halloumi Wrapped in Bacon recipe

Preparation Time: 20 minutes | Cooking Time: 15 minutes

This is almost so easy, you don't need a recipe - but it's totally delicious and makes for a wonderful dinner party nibble or starter. Serve as is or with some salad leaves and a drizzle of balsamic glaze.

Ingredients

  • 250g halloumi cheese
  • 10 rashers pancetta cheese
  • 1 tbsp. snipped chives
  • Black pepper

Directions

  1. Chop the halloumi into 20 batons.

  2. Stretch each pancetta slice with the back of a knife, then slice in half. Sprinkle over the black pepper and chives. Put a baton of halloumi at the end of each slice, then roll up until enclosed.

  3. Place on a baking tray, then bake at 180C for 10-12 minutes or until the pancetta is golden and the halloumi cooked through.

If you like, use fresh basil instead of the chives. Recipe serves 4 as a starter and 20 as a nibble.
