This is almost so easy, you don't need a recipe - but it's totally delicious and makes for a wonderful dinner party nibble or starter. Serve as is or with some salad leaves and a drizzle of balsamic glaze.
- 250g halloumi cheese
- 10 rashers pancetta cheese
- 1 tbsp. snipped chives
- Black pepper
Chop the halloumi into 20 batons.
Stretch each pancetta slice with the back of a knife, then slice in half. Sprinkle over the black pepper and chives. Put a baton of halloumi at the end of each slice, then roll up until enclosed.
Place on a baking tray, then bake at 180C for 10-12 minutes or until the pancetta is golden and the halloumi cooked through.
