Halloumi with Roasted Figs and Honey recipe

Preparation Time: 15 minutes | Cooking Time: 30 minutes

Halloumi works well as part of a dessert platter, as well as a savoury platter. In this recipe, figs are roasted and halloumi grilled, then everything is topped with runny honey, walnuts and a little fresh mint.

Ingredients

  • 250g halloumi cheese
  • 12 fresh figs
  • 6 tbsp. runny honey
  • 100g walnuts
  • 10g fresh mint

Directions

  1. Slice a cross into the top of each fig and squeeze so that the fresh fruit filling comes out. Put onto a baking tray and then drizzle 2 tbsp. honey over the top of the figs. Bake at 160C for 30 minutes or until golden and soft.

  2. Meanwhile, slice the cheese and griddle for 1-2 minutes on either side over a medium heat.

  3. To serve, arrange 3 figs on each plate along with slices of halloumi. Sprinkle walnuts and fresh mint leaves over the top, then drizzle each plate with 1 tbsp. runny honey.

Transform this into a savoury starter by wrapping the figs in parma ham. Serve with a balsamic drizzle in place of the honey. Recipe serves 4.
