Grilled halloumi combines with fresh watermelon, salad leaves, mint, lemon juice and olive oil in this easy peasy yet impressive salad.
- 300g watermelon, flesh only
- 250g halloumi
- 250g salad leaves
- Large handful mint leaves
- Juice of 1 lemon
- 2-3 tbsp. extra virgin olive oil
- Black pepper
Thinly slice the watermelon and halloumi. Heat a griddle pan over a medium heat and chargrill the halloumi for 2-3 minutes on either side or until just charred.
Whisk lemon juice, oil and black pepper together. Toss salad leaves, mint and watermelon together with the dressing, then top with grilled halloumi.
