A fab alternative to French fries, these aubergine fries are crispy and lightly flavoured with herbs and paprika. Serve with grilled meats or just as a snack with some ketchup or tomato salsa.
- 3 baby aubergines
- 100g plain flour
- 2 tsp. dried garlic powder
- 1 tsp. dried oregano
- 1 tsp. dried parsley
- 1/2 tsp. smoked paprika
- Salt and pepper
Peel the aubergines. Slice in half lengthways, then in half lengthways again and slice into chips of even sizes.
Combine flour, garlic, oregano, parsley, paprika, salt and pepper. Add the aubergine and toss to coat in the flour mix. Shake to remove excess.
Heat oil in frying pan. You can either shallow fry, or deep fry depending on your preferences. Fry until golden brown on either side and remove from the pan. Place onto kitchen paper to drain of fat, then serve hot.
