Herby Chicken Nuggets recipe

Preparation Time: 20 minutes | Cooking Time: 20 minutes

These herby chicken nuggets are full of flavour and are a real crowd pleaser. Serve with a homemade ketchup and baked wedges.


  • 3 chicken breasts
  • 125g dried breadcrumbs
  • 50g grated parmesan
  • 1 tsp. each thyme and Italian herbs
  • 1 tsp. salt
  • 100g butter, melted


  1. Preheat oven to 200C. Chop chicken into bite-size chunks.

  2. Mix breadcrumbs, parmesan, thyme, herbs and salt. Dip chicken first into butter and then into the breadcrumb mix, making sure they are well coated. Place onto a parchment lined baking tray.

  3. Bake for 20 minutes or until the coating is crunchy and golden and the chicken tender.

You could also add some black pepper to the breadcrumb mix, if you like. Recipe serves 6.
