These herby chicken nuggets are full of flavour and are a real crowd pleaser. Serve with a homemade ketchup and baked wedges.
- 3 chicken breasts
- 125g dried breadcrumbs
- 50g grated parmesan
- 1 tsp. each thyme and Italian herbs
- 1 tsp. salt
- 100g butter, melted
Preheat oven to 200C. Chop chicken into bite-size chunks.
Mix breadcrumbs, parmesan, thyme, herbs and salt. Dip chicken first into butter and then into the breadcrumb mix, making sure they are well coated. Place onto a parchment lined baking tray.
Bake for 20 minutes or until the coating is crunchy and golden and the chicken tender.
