This easy peasy recipe is simple to make but packed with flavour. Salmon is coated in herbs, garlic and lemon juice and zest, then grilled until just cooked and flaking. Perfect with a light rocket salad.
- 4 x 150g boneless salmon fillets
- Zest and juice of one unwaxed lemon
- 1 garlic clove
- Small handful freshly chopped tarragon
- Small handful freshly chopped parsley
- 2 tbsp. olive oil
Mince the garlic clove. In a bowl, whisk together the lemon juice and olive oil and stir in the garlic, tarragon and parsley. Add the salmon fillets and turn over in the marinade to coat. Cover and leave to sit for about 20 minutes.
Preheat the grill to medium-high and put the salmon fillets onto a tray. Put under the grill for 7-10 minutes and cook until flaking.
