This Chinese style asparagus and chicken dish is packed with flavour and takes just minutes to prepare. Serve over egg noodles or with a little rice, or throw in some extra veggies and serve it as it is as a healthy protein-packed dinner.
- 500g asparagus
- 2 chicken breasts
- 3 tbsp. each groundnut oil and sesame oil
- 6 tbsp. hoisin sauce
- 2 tbsp. dark brown sugar
- 2 tbsp. toasted sesame seeds
Snap the woody ends off of the asparagus and then slice the chicken breasts into thin strips. Mix together the hoisin sauce and the brown sugar.
Heat half the oils in a wok. Add the asparagus and stir fry for 2-3 minutes until tender but crisp. Remove from the pan and set to one side. Add the rest of the oils to the pan, then add the chicken pieces. Fry for 3-4 minutes or until the chicken is cooked through and no longer pink. Add the asparagus and hoisin mix and stir fry until the asparagus and chicken are coated in the sauce.
To serve, sprinkle with the sesame seeds.
