When I was little me and my sister loved pancakes very much. We couldn't wait until it cooled down, immediately after my mum put them on the plate we stuffed the hot pancakes into our mouths. We loved it so much my mum made up a sweet, easy base recipe.
- 200g plain flour
- 2 big eggs
- 600ml milk
- 100g butter
- 4 1/2 tbsps sugar
- 2 lemons
Mix together the flour, eggs, milk, butter and sugar, and stir it until it's smooth.
Heat a small amount of oil in a frying pan; pour enough batter for one pancake into the middle of the frying pan. Fry until cooked to taste, turning once. Repeat until all batter is used.
Slice the lemons and squeeze out their juice; put a small amount of juice on the pancakes, then roll them up.
Serve the pancakes on a plate with honey drizzled on top.
