These chewy, sticky bars are perfect for breakfast. The honey gives a wonderful natural sweet flavour as well as a stickiness, while the walnuts and dates give them a lovely fudgey flavour and a wonderful texture.
- 175g runny honey
- 100g plain flour
- 30g butter
- 2 eggs
- 1/2 tsp. baking powder
- 1 pinch salt
- 75g dates, pitted, chopped
- 75g walnuts, chopped
Preheat oven to 180C and grease a 20cm square cake tin.
Melt the butter over a low heat and pour into a bowl. Beat in the honey and eggs, then stir in the flour, baking powder and salt. Fold in the dates and walnuts, then spread in the baking tin.
Bake for 25 minutes until lightly crisp and holden. Chill for 20 minutes before cutting into bars while still warm.
