Hot and Sour Soup recipe

This soup is hot, spicy, sour and completely vegetarian-friendly.


  • 1 block of firm tofu
  • Eight cherry tomatoes
  • 750ml vegetable stock
  • 1 sweet potato
  • 2 shallots
  • Eight button mushrooms
  • 1 tsp. Thai curry paste
  • 1 stick of lemongrass
  • 1 bird’s eye chilli
  • Juice of one lime
  • Handful of fresh coriander


  1. Bash the lemongrass to bruise the stalk and do the same with the chilli. Peel and cube the sweet potato and dive the tofu block. Quarter the shallots. Finely chop the coriander.

  2. Heat the curry paste in a large pan with the stock and bring it to a simmer. Add in the chilli and lemongrass.

  3. Add the diced sweet potato and cook it for five minutes. Add the shallots, mushrooms and tofu and cook for a further 4 minutes, then add the cherry tomatoes and cook for a further 2 minutes.

  4. To serve, stir in the lime juice and the chopped coriander and remove the lemongrass and chilli.
