Indian Brussels Sprouts recipe

Preparation Time: 10 minutes | Cooking Time: 25 minutes

This unusual dish is a fantastic accompaniment to grilled meats. Brussels sprouts are fried with mustard seeds, cumin seeds, garlic and cayenne pepper. They're super flavourful and you can make them as spicy as you like.


  • 500g Brussels sprouts
  • 2 garlic cloves
  • 1/2 tsp. each black mustard seeds, cumin seeds and cayenne pepper
  • Salt and pepper
  • 1 tbsp. flour
  • 1 tbsp. oil


  1. Trim the sprouts and put into a pot of boiling, salted water. Boil for 2-3 minutes, drain and reserve 150ml of the stock. Finely chop the garlic.

  2. Meanwhile, heat the oil in a large frying pan. Add the mustard seeds and fry until they have started popping. Add the cumin seeds, cayenne and the garlic and stir-fry for 1 minute or until the garlic starts to brown.

  3. Add the sprouts, season with salt and pepper and fry for around 2-4 minutes. Add the reserved liquid, turn the heat up to medium and simmer until the stock reduces by half. Sprinkle the flour in and stir until it absorbs into the liquid and the sauce is smooth.

For a little extra kick, sprinkle with freshly chopped chilli. Recipe serves 4.
