Insalata caprese, also known as insalata tricolore, is a salad made with three simple ingredients, all chosen for their fresh, delicious flavours. In the north of Italy, the ingredients differ slightly - although you can choose the combination you prefer.
- 8 beef tomatoes, sun-ripened if possible
- 4 buffalo mozzarella balls, fresh, drained of liquid
- Basil leaves OR oregano leaves
- Extra-virgin olive oil
Thickly slice the tomatoes so that they still hold their seeds. Discard the ends of the tomatoes. Thinly slice the mozzarella balls.
Arrange the tomatoes and mozzarella slices in overlapping circles on four plates, always interchanging them so you get a pretty stripy pattern.
If using basil leaves, tuck a basil leave between each slice of tomato and mozzarella. If using oregano leaves, simply sprinkle over the whole salad.
Drizzle with extra-virgin olive oil before serving.
