Porcini mushrooms are the perfect pairing to beef because they are earthy and slightly sweet. Add cream and they become something heavenly! This recipe is perfect for after work or even for a dinner party, because it's decadent but really easy to make.
- 4 x beef steaks (get the best you can afford)
- 3 tbsp. oil
- Salt and pepper
- 2 white onions
- 4 x slices ciabatta
- 200g fresh porcini mushrooms
- 250ml double cream
- 2 garlic cloves
To cook the steaks, heat a griddle pan over a high heat. Season the steaks on either side with salt and pepper, rub with a little oil and add to the griddle pan. When charred on either side and cooked to your taste, remove from the pan and leave to rest under foil.
Make the porcini sauce. Thinly slice the onions and roughly chop the mushrooms. Mince the garlic cloves. Heat the oil in a frying pan. Add the onions and fry until very soft and sweet, around 10 minutes, then add the mushrooms and garlic. Cook until golden, then turn the heat down and add the cream. Cook over a low heat until thickened and season to taste.
To serve, grill the ciabatta slices for 10-20 seconds on either side. Put 1 ciabatta slice on one plate. Top with 1 steak, arranging it so that it sits at an angle, then drizzle with the creamy sauce.
